Accordingly, Amali pays every employee an above market, living wage via a 18% hospitality surcharge.

This eliminates the vast pay imbalance between those who prepare your food and those who serve it - a disparity inherent to a gratuity-based system.

Think of it as a European style model in which no further gratuity is necessary or expected.
